Meet your stress baker…

Hi! I’m Whit, the hands & nerves behind Nervous Kneads. Before sourdough took over my life, I worked as an oncology nurse. I grew up in Illinois, moved to Cleveland to start my nursing career, then spent a few years travel nursing in places like Seattle & New York before landing in Omaha after a year of long distance with my fiancé and our two cats, who are usually nearby kneading their own biscuits.

I’ve always been someone who likes to keep my hands busy, whether that was crocheting, gardening, or picking up random creative hobbies, so sourdough quickly became the perfect outlet. Moving to a new city can feel a little isolating, and this bakery has become one of the ways I found connection and community here. Why is making friends in your 30s so weird?!

When I’m not on the dough, I’m busy at my 9-5 working in the stem cell donation world. The bakery happens in the early mornings, late nights, and weekends in between.

You can find Nervous Kneads at Bennington Farmers Market or through weekly preorders that open Wednesdays at 9am for Monday porch pickup near 168th & Maple.

I’m still very much an introvert, but this bakery has pushed me outside of my comfort zone in the best way. If you ever see me out in the wild at a market or pickup, please come say hi!i!
